Crockpot Honey Apple Pork Loin

Ingredients:
Pork Loin, 2.5-3 lbs.
Red Delicious Apples, 3 sliced
Honey, approx 4 T
Cinnamon, 2 T
Process:
Lay the apple slices (from two of the apples) in the bottom of the crockpot.

Sprinkle with cinnamon.
Cut slits in the pork loin (approx 1/2″-3/4″).
Drizzle some honey into the slits.
Then place apple slices into the slits.

Place the pork loin into the crockpot.
Drizzle the top with the remainder of the honey.
Place the rest of the apples on top.

Then sprinkle the whole thing with cinnamon.

Cook on low for 7 hours.
For more flavor, you may poke holes in the pork. Then place the pork loin in a bag with honey and cinnamon and marinate it overnight.

Chicken Cacciatore

Prep: 20 mins
Cook: 7 hrs, 20 mins
Serves: 6
Ingredients:
1 tbs olive oil
3 pds chicken parts, skin removed
4 cloves garlic, minced
2 tsp Italian seasoning, crushed
1 can (28 oz) crushed tomatoes in puree
1 pd mushrooms, halved (~5 cups)
2 medium onions, chopped (~2 cups)
1 medium green pepper, cut in strips
1.5 cups chicken broth
1/4 cup corn starch
1 package (16 oz) pappardelle or fettuccine), cooked and drained
Directions:
1) Heat oil in 12 inch skilled over medium high heat. Add chicken and cook until browned.
2) Stir in garlic, Italian seasoning, tomatoes, mushrooms, onions, pepper and 1 cup of the broth in a 6 qt slow cooker. Add chicken and turn to coat.
3) Cover and cook on low for 7-8 hours or until chicken is cooked through. Remove chicken from the cooker and keep warm.
4) Stir the cornstarch and remaining broth in small bowl untl the mixture is smooth. Stir mixture into the slow cooker. Cover and cook on high 10 minutes or until mixture boils and thickens.
5) Serve with the chicken and pasta.

Crockpot Pulled Pork

Place pork (roast, shoulder or butt) in the crockpot. Pour a cup of water over it. Throw salt & pepper on the pork. Cook on low for 6-8 hours.

Separate liquid and remove any fat peices. Add a bottle of your favorite BBQ sauce and shred. Let that heat up. Serve with rolls.

*Tried this one. The pork came apart really easily. Recipe got a thumbs up from both of us.

Pulled Pork Tacos




Time: 15 mins hands on
Serves 6

2 cups store bought salsa, plus more for serving
2 tbsp chili powder
2 tbsp dried oregano
2 tbsp unsweetened cocoa powder
Salt
1-2.5 pound boneless pork butt or shoulder, trimmed of excess fat
18 corn tortillas
1/2 cup fresh cilantro sprigs
3/4 cup sour cream
1 lime, cut into wedges

In a 4-6 qt slow cooker, combine the salsa, chili powder, oregano and cocoa and 1 tsp salt. Add the pork and turn to coat.

Cook, covered, until the meat is tender and pulls apart easily. On high 4-5 hrs or on low 7-8 hrs.

20 mins before serving, heat oven to 350. Stack tortillas, wrap them in foil, and bake until warm (about 15 mins).

Meanwhile, while using two forks, shred the pork and stir into the cooking liquid.

Serve with lime, cilantro, sour cream and extra salsa

Crockpot 8-hour Turkey Stew

3 cups peeled, cubed potatoes
2 cups quartered mushrooms
1.5 cups chopped carrots
1 cup coarsely chopped onions
2 cloves garlic, minced
1 tsp ground thyme
1 tsp dried basil
1/2 tsp black pepper
2 lbs boneless skinless turkey breast, cut into 1" cubes
2 tbsp flour
1/2 cup dry white wine
1/2 cup low-sodium reduced-fat chicken broth
1.5 tbsp tomato paste
1 tsp lite worcestershire sauce
1/4 cup fresh parsley

Combine first 8 ingredients in a 3-qt or larger crockpot.

Pat turkey cubes dry and coat with flour. Arrange over top of vegetables.

Mix wine, broth, tomato paste and worcestershire sauce in a small bowl. Pour over turkey.

Cover and cook on low setting for approximately 8 hours. During the last hour, stir once or twice, breaking apart any turkey cubes that have stuck together. Be careful not to remove the lid for more than a minute or so. Stir in parsley just before serving.

Smoky Mountain Chili


Smoky Mountain Chili

2 lbs ground beef
1/2 lb chorizo
1/2 lb Italian sausage
1 large onion, diced
2 cloves garlic, minced
6 oz dark beer
1 green pepper, diced
3 jalapenos, finely diced
2 cans diced tomatoes
1 can tomato sauce
1 small can tomato paste
1 can black beans, rinsed and drained
1 can light red kidney beans, rinsed and drained
1 can dark red kidney beans, rinsed and drained
1 cup corn kernels (frozen)
1 T ancho chili powder
1 tsp cayenne pepper
1 tsp garlic salt
1 tsp ground cumin

Brown meat in a large dutch oven or skillet over medium high heat, crumbling with a wooden spatula. Drain off grease and transfer meat to a bowl. Return pan to heat and add onions and garlic. Cook about 2 minutes and add beer to deglaze the pan, scrape any brown bits off the bottom of the pan and let the majority of the beer cook off. Transfer to a crockpot if desired. Reduce heat to medium-low and add tomatoes, tomato sauce, and beans and stir to combine. Add corn, peppers and spices and cook for at least 60 minutes covered on the stove, stirring occasionally or 3-4 hours on low in the crockpot. Stir in tomato paste as necessary to thicken to desired consistency.

Top with shredded sharp cheddar cheese, sour cream, Fritos, etc. as desired.

*I made this in April 2010. Two thumbs up. I used sweet sausage and really liked that part of it. Also added mushrooms since I had some handy. Good stuff.
